I'm a salad person. The textures, the crunch, the thousands of different combinations...you can get so much from one simple dish.
My sister and I are obsessed with this Kale & Brussel Sprout Salad with Bacon (yes....bacon!) recipe. It's a weekly (who am I kidding, daily) staple in my house. I usually make a big batch of it for dinner and then have plenty of leftovers the next day for lunch. For dinner I usually grill up some chicken or salmon AND sometimes I add avocado which brings it to a whole new level.
The dressing is delicious and one you could put on pretty much any salad.
For the Dressing:
- 2 tbs fresh squeezed lemon juice
- 1 tbs dijon mustard
- 1 tsp shallot, finely minced
- 1 clove garlic, finely minced
- 1/8 tsp kosher salt
- Pinch of black pepper
- 1/4 cup extra virgin olive oil
For the Salad:
- 1 pound brussel sprouts, finely shredded
- 2-3 cups thinly sliced kale
- 3-4 slices turkey bacon (or regular)
- 1/4 cup sliced and roasted almonds (good with walnuts, too!)
- 1/2 cup pecorino cheese (parmesan is good, too!)
Now What?
Combine the dressing ingredients and mix thoroughly. Mix the kale and brussel sprouts in a large bowl. Add in the almonds, cheese, and chopped bacon. Pour dressing on top and toss until all ingredients are combined.
